Serves 4, 6-8 mins preparation,10 mins cooking
Ingredients;
- 600g raw king prawns, peeled (with the veins removed and tails left on)
- 2 ½ tsp reen spice’ seafood blend
- 1 tsp spiced chilli blend (add more or less depending on how spicy hot you prefer).
- 3 tablespoon vegetable oil
- 2 garlic cloves, finely chopped, fresh coriander leaves (optional)
- 2 tomatoes, finely chopped
- Sea salt
Instructions;
This is a very easy dish with full of flavour.
Place the prawns in a bowls, season with salt and all the spices and mix. You can marinate beforehand for later cooking.
Heat the oil in large pan, over a medium high heat, when hot, stir in the garlic for 15 seconds.
- Quickly add the prawns and stir-fry for 1 minute, then add the chopped tomatoes.
- Stir-fry for a further 2-3 minutes, then turn the heat down to medium low.
- Let the prawns cook gently for 2-3 minutes, stirring until they just turn pink and cooked through. Add fresh coriander leaves for extra depth of flavour.
- Serve immediately with freshly cooked basmati rice.
