Ingredients

Dry Ingredients:

  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 tsp salt
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp pumpkin and fruit spice.

Wet Ingredients:

  • 2 cups milk
  • ¼ cup vegetable oil
  • 1 tbsp vanilla extract
  • ¼ cup apple cider vinegar
  • 2 large eggs

Instructions;

  1. In a large mixing bowl, whisk together the flour, sugar, salt, baking powder, baking soda, and pumpkin and fruit spice. Make sure all the dry ingredients are well combined to ensure even flavour.
  2. In a separate bowl, combine the milk and apple cider vinegar. Let it sit for about 2-3 minutes. This creates a buttermilk substitute that will give your pancakes their signature tangy flavor. Add the vegetable oil, vanilla extract, and eggs, whisking until smooth.
  3. Pour the wet mixture into the bowl of dry ingredients. Stir gently with a spatula or whisk, just until combined. Don’t over mix—lumpy batter is fine! Over mixing can result in dense pancakes instead of fluffy ones.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with a little butter or oil. Pour about ¼ cup of batter for each pancake onto the skillet. Cook until you see bubbles forming on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes or until golden brown.
  5. Serve your fluffy buttermilk pancakes with a drizzle of maple syrup, a knob of butter, or fresh berries for an added burst of flavour.
